Tomato salad (vegan)

This recipe makes maintaining a balanced diet effortless: Colourful seasonal vegetables, fresh herbs and a light vegan dressing come together to create a wonderful vegan summer salad.

Preparation:

  1. Rinse the tomatoes, gherkins and spinach. Slice the tomatoes and gherkins. Arrange the salad on a large plate with the spinach at the bottom and the tomatoes on top.
  2. Place all the ingredients for the dressing into a small bowl and mix them together. Drizzle the dressing over the salad just before serving.
