Watermelon Granita

Preparation
- Cut the fruit flesh away from the skin and chop into large pieces, removing the seeds. Place the melon flesh in the blender.
Squeeze the lime and add the juice to the blender together with 2 tsp of Hermesetas Granulated. Purée. - Then press the purée through a sieve, pour into a container with a tight-fitting lid and place in the freezer for approx. 2 hours.
Note: The granita will be very liquid at this point. A container with a tight-fitting lid will prevent any spills in the freezer. - When the granita begins to freeze, stir repeatedly or loosen the partially frozen mass with a fork so that the ice crystals that form are as small as possible. Then return it to the freezer. Repeat the process as frequently as possible until the granita has reached the desired consistency.
Serve in dessert bowls or glasses and garnish with fresh mint.
