Fruity red cabbage salad with pomegranate seeds & walnuts

Incredibly simple and unbelievably delicious – this fruity red cabbage salad with pomegranate seeds and walnuts is ideal for a healthy lunch.

Preparation:

  1. Shred the red cabbage finely using a sharp knife. Remove the seeds from the pomegranate. Chop the parsley and place in a bowl together with the red cabbage and pomegranate seeds.
  2. Combine all the ingredients for the dressing, pour over the salad and toss. Chop 2 tbsp of walnuts and sprinkle over the salad shortly before serving.
