Exotic coconut-vanilla chia pudding with berries
Send your taste buds on a journey: experience entirely new sensations with the exotic coconut-vanilla chia pudding with berries.
Preparation
- Chop the cashew nuts and mix them in a bowl with the other dry ingredients. Add the milk and stir well with a spoon until there are no lumps.
Note: It is normal for the mass to look very fluid at this stage; the chia seeds absorb the liquid over time. - Cover the bowl and leave to soak in the refrigerator for a least three hours (or preferably overnight). Stir occasionally, if possible.
- Serve in two glasses each containing 1 tbsp of frozen blueberries. Cover with half of the chia pudding in each glass and decorate with mixed berries.
Hint: Alternatively to the berries, the exotic chia pudding also tastes wonderful when garnished with mango or pineapple.
