Winter spiced cupcakes

Whether you live in London, Brighton or Glasgow, this cupcake recipe is sure to win you over! Skyr, a dairy product from Iceland, gives it a special touch.

Preparation:

  1. Preheat the oven to 170 °C. Mix the dry ingredients in a bowl. Add the butter and mix for several minutes. Stirring continuously, gradually add the creme fraiche and egg and mix until the batter has an even, uniform consistency.
  2. Fill the cupcake moulds up to 3/4 with batter and place in the oven. Bake for approximately 18 minutes or until they are baked through, then remove from the oven and allow to cool completely.
  3. Pour all the ingredients for the frosting into a bowl and whisk until the mixture has a light and airy consistency. Taste and add more Hermesetas if you wish. Place the frosting into a piping bag with a serrated nozzle and decorate the cupcakes.
